Who says vegetarian food doesn’t have protein? This black bean burger is a healthier version of the meaty original and packs a complete protein with beans and rice and egg. The recipe can be adapted to include more / less veggies or different spices.
2 cans black beans (mashed)
1 can corn
1/2 onion
2 T tomato sauce
1/2 rice (or quinoa)
salt and pepper to taste
2 garlic bulbs (chopped)
2 T olive oil
red pepper flakes
1 t cumin
avocado (for garnish)
1 jalapeno
